Ingredients
- 3 cups of chopped/shredded leftover turkey
- 1/4 cup Vidalia or other sweet onion, extremely finely minced
- 1/4 cup celery, extremely finely minced
- 1/2 cup chopped apple
- 1/2 cup mayo* or avocado mayo
- 1/2 cup dried cranberries
- 1/2 cup chopped pecans (optional)
- 1/2 tsp sea salt and pepper

In a large bowl, add the chopped turkey leftovers, chopped apples, onions, celery, salt and pepper, cranberries, chopped pecans (optional), and mayo and mix well.

Serve right away over greens, in lettuce boats, or however you’d like. You can save leftovers in an air tight container in the fridge
