Chocolate Chia Pudding

Chia pudding is just one of those recipes that you can’t go wrong with. Packed with calcium, antioxidants, and naturally free of gluten, this Chocolate Chia Pudding is filled with creamy goodness. Enjoy!
Serves 4
Ingredients:
1/4 cup unsweetened cocoa powder
1/2 tsp ground cinnamon (optional)
1 pinch sea salt
1/2 tsp vanilla extract
3 Tbsp maple syrup
1 1/2 cups almond or coconut milk
1/4 cup chopped brazil nuts
1/2 cup chia seeds
Instructions:
1. To a small mixing bowl add cacao powder, maple syrup, ground cinnamon, salt, and vanilla and whisk to combine. Then add a little dairy-free milk at a time and whisk until smooth.
2. Add chia seeds and whisk once more to combine. Then cover and refrigerate overnight.
3. Top with crushed brazil nuts and berries and serve chilled

Tip: Makes a simple delicious breakfast or dessert. Top with nuts, shredded coconut and berries.
I’ve made this recipe and enjoyed it very much! I was surprised to see Giada DeLauerntis make this as her dessert for her “romantic dinner” on Simply Giada last Saturday. The only difference was that her recipe called for 3/4 cup of coconut yogurt and 3/4 cup of almond milk. I tried it using unsweetened versions of both. She called it “Budino”. Great dessert or treat!

Can oatmilk be used instead? Can it be made without nuts?
You can use the oatmeal instead and you don’t have to add the nuts.
