Immune Boosting Smoothie

My go-to Immune Boosting Smoothie includes avocado, spinach, mint leaves, and a refreshing touch of lemon. The greens in this smoothie contain the vitamins and minerals your body needs for optimal function of your immune system,  the fiber from the greens also feeds the microbiome in your gut, which ensures that you absorb these vitamins and minerals. Enjoy!

  • juice of 1 lemon
  • handful of spinach (fresh or frozen)
  • 1 small cucumber

Used an entire package of frozen spinach (Maybe too much ??) and added some coconut water too. This recipe made two servings; I am enjoying it very much.

Hey! I’m glad you’re enjoying it! If it does not taste too bitter, using the whole package of frozen spinach is completely OK. Unless you need to be on a low oxalate diet ( if you have kidney stones) you don’t have to limit the amount of green leafy vegetables you consume.
