Protein Pancake


Servings: 4, each pancake is about 150 calories, 6 grams of protein and 4 grams of fiber.
I used:
2 scoops of Bee Fit Protein Powder https:// beewell.dogoodcreativewebsi te
1/4 c flax seeds meal
1/4 c almond flour
4 Eggs
2 Tbsp coconut oil
1/4 c coconut milk

Place a non-stick skillet on the stove over medium heat. Add 1 Tbsp. coconut oil and let melt.

Add the eggs, protein powder, 1/4 c flax seeds meal, 1/4 c almond flour , 4 Eggs, and 2 Tbsp coconut oil to a large bowl and start to mix with a whisk.  Add the milk a little at a time until the pancake batter is smooth and pourable.

Using a 1/3 cup measure, pour out the batter into the skillet. They are ready to flip when bubble start to form on the top.

Stack pancakes on a plate and top with blueberries and honey.

Probably good batter for waffles as well.

These Pancakes are really yummy,
I have made waffles with this recipe as well! So good to make in advance and grab as you head out the door. I added about 1/8 tsp baking powder, a pinch of hymalayan salt, and some lemon juice. let it sit for a couple of minutes- it made the pancakes a tad fluffier. Thanks Liat for all your help!
