Zucchini fritters are a great use for leftover zucchini, and can be served with eggs at breakfast or with yogurt dill dip for a side dish.
2 Zucchini’s – grated
1/2 cup shredded cheddar (OR VEGAN, DAIRY FREE CHEESE)
1/4 cup shredded carrots
1/4 cup coconut or almond flour
2 tbs chives
1 tsp salt
1 tsp pepper
cayenne pepper (optional)
Grade Zucchinis and squeeze out excess water with a cheesecloth
Add zucchini, egg, flour, chives, salt, and pepper to a bowl.
Make 8 patties with the mixture
Optional ( place in the freezer for 5-10 minutes) to keep the form
Place air fryer on 350
Put zucchini patties in the air fryer for 5 minutes
Flip over the pattie for an additional 5-10 minutes or until brown.
Note: If you do not have an Airfryer use the oven and bake at 350 degrees for 20 minutes or until brown.
